Ingredients
- - 1/2 cup olive oil, salt and pepper to taste,large bad frozen sweet corn niblets
- - 7 tlbsp. fresh lime juice ( 3 limes) , 1/4 cup sour cream
- - 1/2 red onion sliced thin or diced, optional 1 jalapeno pepper, no seeds sliced thin or diced
- - 1 english cucumber cut in half and sliced thin
- - 3 oz. crumbled feda cheese ( 3/4 cup ), 1/4 cup fresh basil leaves chopped
How To Make corn and cucumber salad

Step 1In large skillet heat 1 tsp. olive oil , add defrosted and drained corn, add salt and pepper, heat medium high until light brown, about 8 minutes

Step 2In bowl mix lime juice, remaining oil , I/2 tsp. pepper. Then add sour cream, onion, basil and jalapeno if desired ( I omitted ) Wisk all together and let stand ten minutes or more

Step 3In serving bowl mix all veggies and vinaigrette. Just before serving top with feta cheese
