Ingredients

  • 1 lb
    carrots, sliced
  • 1 large
    onion, sliced thinly
  • 1 c
    tomato soup
  • 1 c
    sugar, scant
  • 1 tsp
    mustard
  • 1 tsp
    worcestershire sauce
  • 1 medium
    green bell pepper, thinly sliced
  • 1/2 c
    vegetable oil
  • 3/4 c
    apple cider vinegar
  • 1 pinch
    salt and pepper

How to Make Copper Pennies

Step-by-Step

  1. Cook carrots in salted water until medium done,. Rinse in ice water.
  2. In a dish, arrange layers of carrots, green pepper and onion.
  3. Combine all other ingredients in a saucepan and bring to a boil, Stirring until fully blended. Pour mixture over layered vegetables. Refrigerate until flavor is absorbed. Will keep for weeks.
