colorful corn salad
This is a great potluck recipe. It's been very popular at our church picnics and everyone asks how to make it. Of course, I'm happy to share.

Ingredients
- 2 packages (10 oz. each) frozen, thawed corn
- 2 cups diced green bell pepper
- 2 cups diced red bell pepper
- 2 cups diced celery
- 1 cup minced fresh parsley
- 1 cup chopped green onion (4 bunches)
- 1/2 cup shredded fresh parmesan cheese
- 2 1/22 teaspoons ground cumin
- 1 1/2 teaspoons salt
- 3/4 teaspoon pepper
- 1/2 teaspoon hot pepper sauce
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 6 tablespoons lime juice
How To Make colorful corn salad

Step 1In a large bowl, combine the first 12 ingredients.

Step 2In a microwave-safe dish, combine oil and garlic. Microwave, uncovered, on high for 1 minute.

Step 3Cool.

Step 4Whisk in lime juice.

Step 5Pour over the corn mixture and toss to coat.

Step 6Garnish with a couple slices of red and/or green peppers on top.

Step 7Cover and refrigerate until ready to serve
