This is a great potluck recipe. It's been very popular at our church picnics and everyone asks how to make it. Of course, I'm happy to share.

(10 oz. each) frozen, thawed corn
2 c
diced green bell pepper
2 c
diced red bell pepper
2 c
diced celery
1 c
minced fresh parsley
1 c
chopped green onion (4 bunches)
1/2 c
shredded fresh parmesan cheese
2 1/22 tsp
ground cumin
1 1/2 tsp
3/4 tsp
1/2 tsp
hot pepper sauce
3 Tbsp
olive oil
3 clove
garlic, minced
6 Tbsp
lime juice

How to Make Colorful Corn Salad


  • 1In a large bowl, combine the first 12 ingredients.
  • 2In a microwave-safe dish, combine oil and garlic. Microwave, uncovered, on high for 1 minute.
  • 3Cool.
  • 4Whisk in lime juice.
  • 5Pour over the corn mixture and toss to coat.
  • 6Garnish with a couple slices of red and/or green peppers on top.
  • 7Cover and refrigerate until ready to serve
