Ingredients
- 6 tablespoons rice vinegar, unseasoned
- 6 tablespoons vegetable oil
- 5 tablespoons cream peanut butter
- 3 tablespoons soy sauce or tamari
- 3 tablespoons light brown sugar, packed
- 2 tablespoons fresh ginger, peeled and minced
- 1 1/2 tablespoons fresh garlic, minced
- 5 cups green cabbage, thinly sliced
- 2 cups red cabbage,thinly sliced
- 2 large red or yellow bell peppers, cut into matchstick size strips
- 2 medium carrots, peeled and cut into matchstick size strips
- 8 large green onions, cutinto matchstick size strips
- 1/2 cup fresh cilantro, chopped
How To Make colorful asian slaw

Step 1Whisk first 7 ingredients in a small bowl to blend. Chill, but let stand 30 minutes at room temperature before serving.

Step 2Combine remaining ingredients in a large bowl. Add dressing and toss to coat. Season with salt and pepper to taste.
