A great Asian-inspired salad that goes well with grilled ribs, chicken or pork.

Ingredients

  • 6 tablespoons rice vinegar, unseasoned
  • 6 tablespoons vegetable oil
  • 5 tablespoons cream peanut butter
  • 3 tablespoons soy sauce or tamari
  • 3 tablespoons light brown sugar, packed
  • 2 tablespoons fresh ginger, peeled and minced
  • 1 1/2 tablespoons fresh garlic, minced
  • 5 cups green cabbage, thinly sliced
  • 2 cups red cabbage,thinly sliced
  • 2 large red or yellow bell peppers, cut into matchstick size strips
  • 2 medium carrots, peeled and cut into matchstick size strips
  • 8 large green onions, cutinto matchstick size strips
  • 1/2 cup fresh cilantro, chopped

How To Make colorful asian slaw

  • Step 1
    Whisk first 7 ingredients in a small bowl to blend. Chill, but let stand 30 minutes at room temperature before serving.
  • Step 2
    Combine remaining ingredients in a large bowl. Add dressing and toss to coat. Season with salt and pepper to taste.
