A great Asian-inspired salad that goes well with grilled ribs, chicken or pork.

Ingredients For colorful asian slaw

  • 6 Tbsp
    rice vinegar, unseasoned
  • 6 Tbsp
    vegetable oil
  • 5 Tbsp
    cream peanut butter
  • 3 Tbsp
    soy sauce or tamari
  • 3 Tbsp
    light brown sugar, packed
  • 2 Tbsp
    fresh ginger, peeled and minced
  • 1 1/2 Tbsp
    fresh garlic, minced
  • 5 c
    green cabbage, thinly sliced
  • 2 c
    red cabbage,thinly sliced
  • 2 lg
    red or yellow bell peppers, cut into matchstick size strips
  • 2 md
    carrots, peeled and cut into matchstick size strips
  • 8 lg
    green onions, cutinto matchstick size strips
  • 1/2 c
    fresh cilantro, chopped

How To Make colorful asian slaw

  • 1
    Whisk first 7 ingredients in a small bowl to blend. Chill, but let stand 30 minutes at room temperature before serving.

    Combine remaining ingredients in a large bowl. Add dressing and toss to coat. Season with salt and pepper to taste.
