cold sauerkraut salad

I love to make my own fermented vegetables and I'm especially partial to Sauerkraut as it is so easy to make. I wanted to try using a batch of fresh Sauerkraut I had just made, in a salad, and came up with this recipe. This cold salad is bursting with flavor and is a great side especially with grilled meats. I love the crunch and the freshness of the green onions and the pop of the capers. You can use green pepper in place of the jalapeno if you don't do spicy. I hope you enjoy this as much as I do.

Ingredients For cold sauerkraut salad

  • 3 c
    sauerkraut, rinsed and drained
  • 1 c
    celery, chopped
  • 1 sm
    carrot, shredded
  • 1 lg
    jalapeno pepper, seeded and chopped fine
  • 3 Tbsp
    capers
  • 1 bunch
    green onions, chopped
  • 1/4 c
    white wine vinegar
  • 1/4 c
    vegetable oil
  • 3/4 c
    sugar
  • 1 tsp
    ground black pepper
  • salt
    to taste

How To Make cold sauerkraut salad

    Rinse Sauerkraut and let drain. I used homemade Sauerkraut but canned, bagged or jarred will work.

    In a large bowl mix Sauerkraut and all veggies, combine well. Add salt to taste. It shouldn't need much.

    In a small bowl mix vinegar, sugar, oil and pepper. Stir until sugar is mostly dissolved. Pour dressing over vegetable mixture and combine well.

    Refrigerate up to one hour or overnight. Serve cold as a side with your favorite meal and enjoy!
