classic egg salad
Who doesn't like egg salad? To me, if given the choice between egg salad and chicken salad, I'll take the egg any day! I'm tweaking this recipe somewhat with the addition of some pickle relish--just because I like it. Recipe & photo from: http://www.incredibleegg.org

Ingredients
- 6 - eggs, hard boiled, sliced
- 1/4 cup mayonnaise
- 2 teaspoons fresh lemon juice
- 1 tablespoon minced onion
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped celery
- 1/4 cup sweet pickle relish
- - lettuce leaves
How To Make classic egg salad

Step 1Reserve 4 center egg slices for garnish, if desired. Chop remaining eggs.

Step 2Mix mayonnaise, lemon juice, onion, salt and pepper in medium bowl. Add the chopped eggs, celery, and pickle relish; mix well.

Step 3Refrigerate, covered, to blend flavors.

Step 4Serve on lettuce leaves; garnish with reserved egg slices.
