This salad is extremely flavorful. The fruits are complementary and give the salad a slightly sweet flavor. Even my picky husband loves this salad.

Ingredients

  • 4 c
    brussel sprouts
  • 1 c
    dried cranberries
  • 6 oz
    pomegranate arils with juice
  • 12 oz
    mandarin oranges
  • 1/4 c
    almonds, slivered
  • 2 Tbsp
    maple syrup
  • 2 Tbsp
    apple cider vinegar
  • 1 large
    orange, zest and juice
  • 1/4 tsp
    cinnamon

How to Make Citrus Brussel Sprout Salad

Step-by-Step

  1. Wash brussel sprouts. Cut off end and remove old leaves. Shred finely. Put into a large bowl.
  2. Add cranberries, pomegranate arils, mandarin orange segments and slivered almonds.
  3. Mix together maple syrup, apple cider vinegar, orange zest, orange juice and cinnamon. Pour dressing over salad. Toss until completely covered with dressing.
  4. Chill one to two hours or overnight.
