This salad is extremely flavorful. The fruits are complementary and give the salad a slightly sweet flavor. Even my picky husband loves this salad.

Ingredients

  • 4 cups brussel sprouts
  • 1 cup dried cranberries
  • 6 ounces pomegranate arils with juice
  • 12 ounces mandarin oranges
  • 1/4 cup almonds, slivered
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 large orange, zest and juice
  • 1/4 teaspoon cinnamon

How To Make citrus brussel sprout salad

  • Step 1
    Wash brussel sprouts. Cut off end and remove old leaves. Shred finely. Put into a large bowl.
  • Step 2
    Add cranberries, pomegranate arils, mandarin orange segments and slivered almonds.
  • Step 3
    Mix together maple syrup, apple cider vinegar, orange zest, orange juice and cinnamon. Pour dressing over salad. Toss until completely covered with dressing.
  • Step 4
    Chill one to two hours or overnight.
