chickpea salad
I was looking for a different Sumer Salad that would please everyone. Even acceptable for vegan diet. This is a wonderful & healthy side dish everyone is delighted to enjoy.

Ingredients
- 1 can chick peas 15 oz rinsed & drained
- 1 dill pickle, chopped
- 1/4 cup onion red or yellow
- 1/3 cup mayonnaise
- 1/4 teaspoon salt
- black pepper
- 1 stalk celery, chopped (about 1/2 cup)
- 1 teaspoon lemon juice
How To Make chickpea salad

Step 1Place chickpeas in medium bowl, Coarsely mash with a potato masher,leaving some beans whole

Step 2Add celery, pickle and onion, stir to mix. Add mayonnaise and lemon juice, mix well. Taste & add the salt (add more if desired) Sprinkle with pepper, mix well.

Step 3Serve with lettuce and tomato with bread
