chickpea salad

I was looking for a different Sumer Salad that would please everyone. Even acceptable for vegan diet. This is a wonderful & healthy side dish everyone is delighted to enjoy.

Ingredients For chickpea salad

  • 1 can
    chick peas 15 oz rinsed & drained
  • 1
    dill pickle, chopped
  • 1/4 c
    onion red or yellow
  • 1/3 c
    mayonnaise
  • 1/4 tsp
    salt
  • black pepper
  • 1 stalk
    celery, chopped (about 1/2 cup)
  • 1 tsp
    lemon juice

How To Make chickpea salad

  • 1
    Place chickpeas in medium bowl, Coarsely mash with a potato masher,leaving some beans whole
  • 2
    Add celery, pickle and onion, stir to mix. Add mayonnaise and lemon juice, mix well. Taste & add the salt (add more if desired) Sprinkle with pepper, mix well.

    Serve with lettuce and tomato with bread
