I was looking for a different Sumer Salad that would please everyone. Even acceptable for vegan diet. This is a wonderful & healthy side dish everyone is delighted to enjoy.

Ingredients For chickpea salad

1 canchick peas 15 oz rinsed & drained

1dill pickle, chopped

1/4 conion red or yellow

1/3 cmayonnaise
-
1/4 tspsalt
-
black pepper
-
1 stalkcelery, chopped (about 1/2 cup)

1 tsplemon juice
How To Make chickpea salad

1Place chickpeas in medium bowl, Coarsely mash with a potato masher,leaving some beans whole

2Add celery, pickle and onion, stir to mix. Add mayonnaise and lemon juice, mix well. Taste & add the salt (add more if desired) Sprinkle with pepper, mix well.

3Serve with lettuce and tomato with bread
