This is a refreshing summer salad.

Ingredients

  • 1 can chickpeas (garbanzos), drained
  • 1/4 cup diced red onion
  • 1 medium cucumber, peeled and diced
  • 1 medium tomato, chopped
  • 1/2 cup red wine vinegar
  • 1/2 cup balsamic vinegar
  • 2 teaspoons parsley
  • 1 teaspoon dill weed
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon lime juice

How To Make chickpea salad

  • Step 1
    In a bowl, combine chickpeas, tomato, cucumber and onion. Toss gently to mix.
  • Step 2
    In a small bowl, combine both vinegars, lime and lemon juices, parsley and dill weed. Mix very well.
  • Step 3
    Pour the dressing over the salad and toss to coat.
