chickpea salad (meatless)
Was looking for a healthy sandwich option and came across a vegan recipes similar to this. I took advise from a Forks over Knives article that said to soak dried garbanzo beans. The flavor is more nutty.

Ingredients
- 8 ounces garbanzo beans, dry
- 1/2 cup red onion diced
- 1/2 cup celery stalk diced
- 1/2 cup cashew s, chopped fine
- 4 tablespoons hummus
- 1/2 small lemon squeezed
- 1 tablespoon maple syrup
- 1/2 cup dried cranberries
- 1/2 cup walnut halves
- SPICES
- 2 pinches himalayan salt, pepper, smoked paprika
- 1 pinch garlic powder
- 1/3 cup mayo
How To Make chickpea salad (meatless)

Step 1Mix hummus, mayo and cashews. Squeeze lemon

Step 2Mash chick peas and add to cashew mix.

Step 3Chop celery and onion. Add spices. Mix all.

Step 4Serve on seedy bread with lettuce, dill pickles and spicy mustard.
