Was looking for a healthy sandwich option and came across a vegan recipes similar to this. I took advise from a Forks over Knives article that said to soak dried garbanzo beans. The flavor is more nutty.

Ingredients

  • 8 ounces garbanzo beans, dry
  • 1/2 cup red onion diced
  • 1/2 cup celery stalk diced
  • 1/2 cup cashew s, chopped fine
  • 4 tablespoons hummus
  • 1/2 small lemon squeezed
  • 1 tablespoon maple syrup
  • 1/2 cup dried cranberries
  • 1/2 cup walnut halves
  • SPICES
  • 2 pinches himalayan salt, pepper, smoked paprika
  • 1 pinch garlic powder
  • 1/3 cup mayo

How To Make chickpea salad (meatless)

  • Step 1
    Mix hummus, mayo and cashews. Squeeze lemon
  • Step 2
    Mash chick peas and add to cashew mix.
  • Step 3
    Chop celery and onion. Add spices. Mix all.
  • Step 4
    Serve on seedy bread with lettuce, dill pickles and spicy mustard.
