Was looking for a healthy sandwich option and came across a vegan recipes similar to this.

I took advise from a Forks over Knives article that said to soak dried garbanzo beans. The flavor is more nutty.

Ingredients

  • 8 oz
    garbanzo beans, dry
  • 1/2 c
    red onion diced
  • 1/2 c
    celery stalk diced
  • 1/2 c
    cashew s, chopped fine
  • 4 Tbsp
    hummus
  • 1/2 small
    lemon squeezed
  • 1 Tbsp
    maple syrup
  • 1/2 c
    dried cranberries
  • 1/2 c
    walnut halves
  • SPICES

  • 2 pinch
    himalayan salt, pepper, smoked paprika
  • 1 pinch
    garlic powder
  • 1/3 c
    mayo

How to Make Chickpea salad (meatless)

Step-by-Step

  1. Mix hummus, mayo and cashews.

    Squeeze lemon
  2. Mash chick peas and add to cashew mix.
  3. Chop celery and onion. Add spices.

    Mix all.
  4. Serve on seedy bread with lettuce, dill pickles and spicy mustard.
