Chick Pea and Rice Salad

This is really tasty and a nice way to combine chick peas and rice in one dish. You can serve this over a bed of greens as well.

cook rice
1-15 oz. can(s)
chick peas
1 small
leek, chopped thin, cleaned (disgard green part)
2 clove
garlic, roasted and minced
1/4-1/2 c
chopped parsley
1/4-1/2 tsp
red pepper flakes
2 tsp
cumin, ground
2 tsp
3 Tbsp
fresh lemon juice
1 Tbsp
grapeseed oil
salt and pepper to taste
2 Tbsp
toated sesame seeds
additional options: chopped cucumber, tomato or tahini sauce.

How to Make Chick Pea and Rice Salad


  • 1Mix all the ingredients in a large bowl until evenly combined.
  • 2You can heat this one up, or stick it in the fridge and eatit cold.
  • 3It keeps up to about a week.
