This is really tasty and a nice way to combine chick peas and rice in one dish. You can serve this over a bed of greens as well.

Ingredients

  • 2 cups cook rice
  • 1-15 oz. can chick peas
  • 1 small leek, chopped thin, cleaned (disgard green part)
  • 2 cloves garlic, roasted and minced
  • 1/4-1/2 cup chopped parsley
  • 1/4-1/2 teaspoon red pepper flakes
  • 2 teaspoons cumin, ground
  • 2 teaspoons coriander
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon grapeseed oil
  • - salt and pepper to taste
  • 2 tablespoons toated sesame seeds
  • - additional options: chopped cucumber, tomato or tahini sauce.

How To Make chick pea and rice salad

  • Step 1
    Mix all the ingredients in a large bowl until evenly combined.
  • Step 2
    You can heat this one up, or stick it in the fridge and eatit cold.
  • Step 3
    It keeps up to about a week.
