Chick Pea and Rice Salad

This is really tasty and a nice way to combine chick peas and rice in one dish. You can serve this over a bed of greens as well.

  • 2 c
    cook rice
  • 1-15 oz. can(s)
    chick peas
  • 1 small
    leek, chopped thin, cleaned (disgard green part)
  • 2 clove
    garlic, roasted and minced
  • 1/4-1/2 c
    chopped parsley
  • 1/4-1/2 tsp
    red pepper flakes
  • 2 tsp
    cumin, ground
  • 2 tsp
  • 3 Tbsp
    fresh lemon juice
  • 1 Tbsp
    grapeseed oil
  • ·
    salt and pepper to taste
  • 2 Tbsp
    toated sesame seeds
  • ·
    additional options: chopped cucumber, tomato or tahini sauce.

How to Make Chick Pea and Rice Salad


  1. Mix all the ingredients in a large bowl until evenly combined.
  2. You can heat this one up, or stick it in the fridge and eatit cold.
  3. It keeps up to about a week.
  4. Enjoy
