This is really good, I've eaten it but never made it myself. Worth the time it takes to refrigerate before serving, the flavors blend nicely.

Ingredients

  • 6 cups fresh cauliflower, in small florets
  • 3 - plum tomatoes
  • 3/4 cup thinly sliced green onions
  • 1-1/2 cup shredded cheddar cheese
  • 1/2 cup sliced pimento-stuffed olives*
  • 9 tablespoons mayonnaise (1/2 cup + 1 tblsp)
  • 12 - strips bacon, cut up & cooked

How To Make cauliflower salad

  • Step 1
    In large bowl, combine cauliflower, tomatoes, onions, cheese and olives (*can substitute sweet red peppers for olives, if desired).
  • Step 2
    Add mayonnaise, toss to coat.
  • Step 3
    Cover and refrigerate for at least 1 hour. Just before serving, sprinkle with bacon.
