This is really good, I've eaten it but never made it myself. Worth the time it takes to refrigerate before serving, the flavors blend nicely.

Ingredients
- 6 cups fresh cauliflower, in small florets
- 3 - plum tomatoes
- 3/4 cup thinly sliced green onions
- 1-1/2 cup shredded cheddar cheese
- 1/2 cup sliced pimento-stuffed olives*
- 9 tablespoons mayonnaise (1/2 cup + 1 tblsp)
- 12 - strips bacon, cut up & cooked
How To Make cauliflower salad

Step 1In large bowl, combine cauliflower, tomatoes, onions, cheese and olives (*can substitute sweet red peppers for olives, if desired).

Step 2Add mayonnaise, toss to coat.

Step 3Cover and refrigerate for at least 1 hour. Just before serving, sprinkle with bacon.
