This is a healthy variation of a Caprese salad with quinoa and brown rice. I decided to try something healthy as a change-up! I'm eliminating pasta from my diet.

- 1 pound Campari tomatoes
- 1 pound fresh mozzarella balls
- 1/4 cup red onion, diced
- 1 ounce fresh basil, chopped
- 1 package quinoa and brown rice
- 1/2 cup light honey balsalmic dressing
