This is a healthy variation of a Caprese salad with quinoa and brown rice. I decided to try something healthy as a change-up! I'm eliminating pasta from my diet.

Caprese salad is a classic recipe with fresh tomatoes, mozzarella cheese, and basil. This version adds a little brown rice and quinoa for a heartier salad. The honey balsamic dressing gives the dish a lightly sweet and tangy flavor. It's delicious and will be great for a picnic or even a dinner party.

Ingredients

  • 1 pound Campari tomatoes
  • 1 pound fresh mozzarella balls
  • 1/4 cup red onion, diced
  • 1 ounce fresh basil, chopped
  • 1 package quinoa and brown rice
  • 1/2 cup light honey balsalmic dressing

If you want to bump up the salad even more, drizzle a bit of balsamic glaze over the salad before serving.
  • Cutting the tomatoes into wedges.

  • Red onion and basil chopped on a cutting board.

    Chop red onion and basil.
  • Prepared quinoa and brown rice in a bowl.

    Prepare quinoa/brown rice as directed on the package.
  • Quinoa/rice, tomatoes, onion, and basil in a bowl.
    Step 4
    Mix together quinoa/rice, tomatoes, onion, and basil in a bowl.
  • Folding in balls of mozzarella and dressing.
    Step 5
    Add mozzarella balls and gently toss in honey balsamic vinaigrette.
  • Prepared salad covered in plastic wrap.
    Step 6
    Refrigerate and serve cold.
