cabbage slaw with cumin lime dressing

A light and crunchy slaw that is a refreshing change from creamy slaw. I take this to family gatherings in the summer and it always gets eaten right up! I also like to add a bit of chopped jalapeño to taste when I make it for myself as I love spicy. There are many veggie options to make this slaw if you have certain veggies you prefer, just use your imagination and make it your own.

Ingredients For cabbage slaw with cumin lime dressing

  • 1/2 head
    green cabbage, shredded
  • 1/2 head
    red cabbage, shredded
  • 1 lg
    carrot, julienned or grated
  • 1/4
    red onion, thinly sliced
  • 1/4 bunch
    fresh cilantro, chopped
  • 1/2
    red bell pepper, cubed
  • sm
    jalapeño, chopped, or to taste, optional
  • DRESSING INGREDIENTS:
  • 3 Tbsp
    fresh squeezed lime juice
  • 1 Tbsp
    seasoned rice wine vinegar
  • 1/2 tsp
    salt, (kosher or sea salt)
  • 1/4 tsp
    fresh ground black pepper
  • 1/4 tsp
    ground cumin
  • 1/3 c
    avocado oil

How To Make cabbage slaw with cumin lime dressing

    In a large bowl, combine vegetables and toss.

    In a small mixing bowl, combine lime juice, rice wine vinegar, salt, pepper, and cumin. Whisk to dissolve salt. Slowly drizzle in avocado oil while continuing to whisk until fully incorporated into a dressing. Drizzle dressing over veggies and toss to coat.
