A healthy version of slaw that will change your mind on eating any other slaw!

Ingredients

  • 16 ounces brussel sprouts
  • 1 medium zucchini
  • 1/2 cup red onion
  • 10 slices precooked bacon
  • 1 medium green apple
  • 1 cup sunflower seeds
  • HONEY DIJON MUSTARD DILL DRESSING
  • 3 tablespoons mayonnaise
  • 4 tablespoons honey dijon mustard by skinnygirl
  • 1 small lime
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pinches dried dill

How To Make brussel sprout and zucchini slaw

  • Step 1
    In a medium bowl the mayonnaise and Honey Dijon Mustard.
  • Step 2
    Squeeze the lime juice into the mayonnaise and Honey Dijon Mustard,
  • Step 3
    Add the Dill, Salt and Pepper to the mixture, mix well. Set the dressing aside.
  • Step 4
    Cut ends off Brussel Sprouts, then cut them in half. In a food processor using the grater blade, grate a few Brussel Sprouts at a time. Add grated Sprouts to a large bowl.
  • Step 5
    Grate the Zucchini are dice it, and add to the Broussel Sprouts.
  • Step 6
    Cook the bacon! Allow to cool!
  • Step 7
    Peel the apple and dice it, and add to the Brussel Sprouts and Zucchini.
  • Step 8
    Crumble the bacon and add to the Brussel Sprouts and Zucchini.
  • Step 9
    Pour in the sunflower seeds, mix well.
  • Step 10
    Add the dressing and toss the slaw! Chill 30 minutes!
