Ingredients
- 4 cans black-eyed peas
- 4 ounces feta cheese
- 1 cup black olives, quartered
- 1 bunch fresh chives, chopped
- 1 clove garlic, minced
- 1 bunch fresh spinach, washed & chopped
- 1 large lemon - use the zest and juice
- 1 large bell pepper, chopped (optional)
- 24 small cherry tomatoes, cut in 1/2s or 1/3s
