Ingredients

  • 4 can(s)
    black-eyed peas
  • 4 oz
    feta cheese
  • 1 c
    black olives, quartered
  • 1 bunch
    fresh chives, chopped
  • 1 clove
    garlic, minced
  • 1 bunch
    fresh spinach, washed & chopped
  • 1 large
    lemon - use the zest and juice
  • 1 large
    bell pepper, chopped (optional)
  • 24 small
    cherry tomatoes, cut in 1/2s or 1/3s

How to Make Black Eyed Pea Salad

Step-by-Step

  1. Add the chopped spinach to a large bowl.
  2. Crumble the feta cheese into the bowl.
  3. Add all the other ingredients. Mix well before serving.
