  • 1/2 c
    olive oil
  • 1/2 c
  • 3/4 can(s)
    apple cider vinegar
  • ·
    salt and pepper

  • 1 c
    chopped sweet pepper
  • 1 c
    green onion
  • 1 c
    celery chopped
  • 1 can(s)
    black beans drained and rinsed
  • 1 can(s)
    lentils or other beans drained and rinsed
  • 1 can(s)
    niblets corn

How to Make Bean Salad


  1. Put all salad ingredients in a large bowl.
  2. Mix the dressing ingredients in a small pot and bring to a boil, stir until sugar dissolves.
  3. Cool mixture for 20-25 min. and then pour over veggies.Mix well. Enjoy
