bean and rice salad

I love to make salads out of anything this is a salad I mixed up using leftover rice and beans. You can use can beans as well,use the 15 oz can.

Ingredients

  • - 2 c pinto beans,drained
  • - 2 c black beans,drained
  • - 3 c rice,cooked and cooled
  • - 10 oz pkg. frozen green peas,thawed
  • - 1/2 c red onion,chopped
  • - 8 oz can green chilies,diced
  • - 1/4 c cilantro,chopped
  • - garlic dressing :
  • - 1/3 c white wine vinegar
  • - 1/4 c olive oil
  • - 3/4 t. salt
  • - 1/2 t. garlic powder
  • - 1/2 t. pepper

How To Make bean and rice salad

  • Step 1
    Whisk garlic dressing ingredients together. Combine remaining ingredients. Pour enough dressing to coat ingredients, Stir well. Chill.
