I love to make salads out of anything this is a salad I mixed up using leftover rice and beans. You can use can beans as well,use the 15 oz can.

Ingredients

  • ·
    2 c pinto beans,drained
  • ·
    2 c black beans,drained
  • ·
    3 c rice,cooked and cooled
  • ·
    10 oz pkg. frozen green peas,thawed
  • ·
    1/2 c red onion,chopped
  • ·
    8 oz can green chilies,diced
  • ·
    1/4 c cilantro,chopped
  • ·
    garlic dressing :
  • ·
    1/3 c white wine vinegar
  • ·
    1/4 c olive oil
  • ·
    3/4 t. salt
  • ·
    1/2 t. garlic powder
  • ·
    1/2 t. pepper

How to Make Bean and Rice Salad

Step-by-Step

  1. Whisk garlic dressing ingredients together.
    Combine remaining ingredients. Pour enough dressing to coat ingredients, Stir well. Chill.
