We've had chilled pasta salad before but never had a chilled rice salad. It's now a new favorite! This salad is light and fresh. We enjoyed the tangy vinegar flavor. It pairs well with the fresh taste of the basil. Serve as a side dish or a main dish. This basil tomato salad is delicious.

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 2 tablespoons basil, fresh chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups rice, cooked, cooled
  • 2 - tomatoes, chopped
  • 1 - cucumber, seeded and chopped
  • 1 small red onion, chopped

How To Make basil tomato salad

  • Oil, vinegar, basil, salt, and pepper in a bowl.
    Step 1
    In a small bowl, whisk together oil, vinegar, basil, salt, and pepper.
  • Tossing vinaigrette with remaining ingredients.
    Step 2
    Add rice, tomatoes, cucumber, and onion. Toss. Serve chilled.
