The inspiration for this refreshing cucumber salad came from Wendy Peterson. This is a great side for any meal. Get creative and add shredded cooked chicken or shrimp to the salad and you have a meal. Thank you Wendy! sw:)

Ingredients

  • 1 large english cucumbers, chopped
  • 3 tablespoons rice vinegar
  • 1 tablespoon splenda
  • 1 teaspoon kosher salt
  • 1 medium lime zest
  • 1 teaspoon fresh ginger, grated
  • 1 large garlic clove, grated
  • 1/2 small hot chili pepper. chopped
  • 1 tablespoon fresh basil leaves,torn
  • 1 tablespoon fresh mint, chopped

How To Make basil-mint cucumber salad

  • Step 1
    Mix all ingredients together. Chill for at least 15 minutes.
