How To Make basil apple salad
-
Step 1Pound chicken breasts to similar thickness & place in a pan with water to cover , add 2 TBLS salt and ½ tsp of pepper. Simmer until no longer pink, chill in fridge if making later or add to ice water in a bowl. (You can use store bought rotisserie chicken, shredded into bitesize pieces too)
-
Step 2While chicken is chilling, mix lime juice, vinegar, sugar, remaining s & p, mix until sugar is dissolved.
-
Step 3Core the apples and chop them into small bitesize pieces, leaving the peel on. Add to the lime vinegar dressing. The lime juice will keep the apples from getting brown.
-
Step 4Chop the chicken into bite size pieces, add to the apple mixture, then toss in the peanuts, basil & mint.
-
Step 5Do not over stir or mix, simply toss to cover with dressing. Garnish with mint or basil leaves and serve.
