Ingredients
- 2 - 15oz cans chick peas
- 1-15oz can black beans
- 1-15oz can tomatoes, canned italian-style and diced
- 1/2 - chopped onion
- 1/4 cup minced fresh mint
- 1/4 cup minced fresh parsley
- 1/4 cup olive oil, extra virgin
- 1/2 cup cider vinegar
- 1 clove minced garlic
- 1 teaspoon lemon zest, grated
- - salt and pepper to taste
