Bacalhau Chickpea Salad
1 lbsalt cod (bacalhau)
1/2 cchopped black olives
2 smallonions, thinly sliced
1 can(s)(14.5 oz) chickpeas, drained and rinsed
2 Tbspolive oil
1/2 cchopped fresh parsley
How to Make Bacalhau Chickpea Salad
- Wash and soak the cod in a bowl of water. Change the water 3 times over the course of 8-10 hours.
- In a saucepan, add the cod and water. Bring the water to a boil 1-2 minutes. Drain the water and tear the bacalhau into small pieces.
- In a large bowl add the pieces of bacalhau along with the rest of the ingredients. Toss the ingredients together well and serve, room temperature, or chill and serve cold.
