I got this recipe from skinnytaste.com I added a little bit of diced jalapenos and cilantro for some extra flavor. Weight Watcher Points: 4 Serving Size: 1/2 cup

Ingredients

  • 4 large hard boiled eggs, chopped
  • 4 large hard boiled egg whites, chopped (discard rest)
  • 1 medium hass avocado, cut into 1/2 inch pieces
  • 1 tablespoon light mayonnaise
  • 1 tablespoon fat free plain yogurt
  • 1/2 tablespoon finely chopped chives
  • 2 teaspoons red wine vinegar
  • 1/2 teaspoon kosher salt
  • pinch freshly ground pepper

How To Make avocado egg salad

  • Step 1
    Combine the egg yolks with the avocado, light mayo, yogurt, chives, vinegar, salt and pepper. Mash with a fork. Combine with egg whites and adjust salt as needed.
