Ingredients

  • 2 large ripe avocados,hass brand if you can get them!
  • 3 medium ripe tomatoes
  • 1 small seedless cucumber
  • 1 medium lime
  • 1 bunch fresh cilantro
  • 1/2 cup olive oil, extra virgin
  • 1/2 teaspoon salt and pepper
  • 1 pinch oregano, dried
  • 1 pound cooked plain shrimp
  • 4 medium serving bowls
  • 1 bunch butter lettuce leaves

How To Make avocado and tomato salad with shrimp

  • Step 1
    Peel and dice avocado into bite sIze pieces along with the tomato and the cucumber into a large mixing bowl. Add the cooked shrimp,mix well.
  • Step 2
    Grate 1/2 of the lime zest then squeeze the juice into the salad.Finley chop about 1 cup of the cilantro leaves,add the oregano,olive oil,cilantro,salt&pepper to the salad. Mix well and refrigerate.
  • Step 3
    line the bowls with the butter lettuce leaves,fill with salad and serve. This can be served with warm tortillas or bread whichever you prefer! Enjoy!
