1/2 cquinoa, raw ( can use red or white, i like to use both.)
1 cchicken broth or water
1 ceach diced apples and pears. (sprinkle with fruit fresh to keep from turning brown.)
1/4 cdried cranberries
1/4 ctoasted silvered almonds
1 Tbsppomegranate seeds (optional)
How to Make Autumn Fruit Quinoa Salad
- Soak quinoa in cold water for about 5-10 minutes, rinse and drain well in fine mesh strainer. Bring chicken or water to a boil, add quinoa, cover and simmer approximately 30 min. or until tender and liquid is absorbed. I cook my quinoa in a rice cooker, works like a charm. Cool quinoa to room temperature.
- Add remaining ingredients and mix well. Drizzle with about 1 TBS of my Apple Cider Vinaigerette. Can also use other bottled fruit based vinaigrettes but the Apple Cider is best.
