This keeps well for 3-4 days. I like to make up a batch on the weekend for lunches during the week.

Ingredients

  • 1/2 cup quinoa, raw ( can use red or white, i like to use both.)
  • 1 cup chicken broth or water
  • 1 cup each diced apples and pears. (sprinkle with fruit fresh to keep from turning brown.)
  • 1/4 cup dried cranberries
  • 1/4 cup toasted silvered almonds
  • 1 tablespoon pomegranate seeds (optional)

How To Make autumn fruit quinoa salad

  • Step 1
    Soak quinoa in cold water for about 5-10 minutes, rinse and drain well in fine mesh strainer. Bring chicken or water to a boil, add quinoa, cover and simmer approximately 30 min. or until tender and liquid is absorbed. I cook my quinoa in a rice cooker, works like a charm. Cool quinoa to room temperature.
  • Step 2
    Add remaining ingredients and mix well. Drizzle with about 1 TBS of my Apple Cider Vinaigerette. Can also use other bottled fruit based vinaigrettes but the Apple Cider is best.
