Ingredients

  • 2 large granny smith apples, skin on and julienned (about 3 cups)
  • 3 large carrots, peeled and julienned (about 2 cups)
  • - juice of 1 large orange
  • 3 tablespoons olive oil
  • 2 tablespoons chopped fresh italian parsley
  • 1/4 teaspoon salt
  • - ground black pepper, to taste

How To Make apple & carrot salad (no mayo)

  • Step 1
    Toss the apples and carrots in a salad bowl with the orange juice and olive oil. Sprinkle with the parsley, season with the salt and pepper, and toss again.
  • Step 2
    Chill in refrigerator for 30 minutes. Serve cold.
