- 2 large granny smith apples, skin on and julienned (about 3 cups)
- 3 large carrots, peeled and julienned (about 2 cups)
- - juice of 1 large orange
- 3 tablespoons olive oil
- 2 tablespoons chopped fresh italian parsley
- 1/4 teaspoon salt
- - ground black pepper, to taste
How To Make apple & carrot salad (no mayo)

Step 1Toss the apples and carrots in a salad bowl with the orange juice and olive oil. Sprinkle with the parsley, season with the salt and pepper, and toss again.

Step 2Chill in refrigerator for 30 minutes. Serve cold.
