Ingredients For apple & carrot salad (no mayo)

  • 2 lg
    granny smith apples, skin on and julienned (about 3 cups)
  • 3 lg
    carrots, peeled and julienned (about 2 cups)
  • juice of 1 large orange
  • 3 Tbsp
    olive oil
  • 2 Tbsp
    chopped fresh italian parsley
  • 1/4 tsp
  • ground black pepper, to taste

How To Make apple & carrot salad (no mayo)

    Toss the apples and carrots in a salad bowl with the orange juice and olive oil. Sprinkle with the parsley, season with the salt and pepper, and toss again.

    Chill in refrigerator for 30 minutes. Serve cold.
