Eating this salad makes me feel so healthy! Also, it is colorful and pretty. P.S. - I had a hard time finding the right dressing for this salad, and tried several - I found Marie's Pomegranate Blueberry Vinaigrette dressing (in the produce section) to be perfect!

Ingredients

  • 4 c
    fresh kale, chopped
  • 1 small
    carrot, shredded*
  • 1 oz
    cabbage, shredded*
  • 1/4 c
    red onion, diced
  • 1/4 c
    dried cranberries
  • 1/4 c
    sunflower seeds
  • 1/4 c
    slivered or sliced almonds
  • 1/3 c
    blueberries, fresh
  • ·
    marie's pomegranate blueberry vinaigrette dressing!
  • ·
    * instead of shredded carrot/cabbage, use 1/2 cup already made broccoli slaw

How to Make Ali's Kale-Blueberry Salad

Step-by-Step

  1. Rinse and drain kale, chop into small pieces, put into large salad bowl. Shred carrot and cabbage, if using (or use store-bought broccoli slaw, already shredded), add to bowl. Dice red onion, add to bowl.
  2. Add sunflower seeds, almonds, cranberries and blueberries. Toss to mix well.
  3. Add dressing and serve.
