st. patrick's salad
I was given this recipe at least 45 years ago and it has been a favorite with our family since then. Using sugar free, and lite or low fat ingredients makes this a healthy choice. This is also a great summer salad when served on a bed of lettuce.

Ingredients
- 1 small box lime gelatin
- 1 small box lemon gelatin
- 2 cups boiling water
- 1 cup pineapple juice
- 2-3 - drops green food coloring
- 1 cup crushed pineapple drained
- 1 cup evaporated milk
- 1 cup mayonnaise
- 1 pound cottage cheese
- 1/2 cup chopped walnuts (optional)
How To Make st. patrick's salad

Step 1Disolve gelatin in boiling water. Add juice and green food coloring (if desired). Chill until mixture begins to thicken.

Step 2Fold in remaining ingredients and chill overnight until fully set.
