I was given this recipe at least 45 years ago and it has been a favorite with our family since then. Using sugar free, and lite or low fat ingredients makes this a healthy choice. This is also a great summer salad when served on a bed of lettuce.

Ingredients

  • 1 small box
    lime gelatin
  • 1 small box
    lemon gelatin
  • 2 c
    boiling water
  • 1 c
    pineapple juice
  • 2-3
    drops green food coloring
  • 1 c
    crushed pineapple drained
  • 1 c
    evaporated milk
  • 1 c
    mayonnaise
  • 1 lb
    cottage cheese
  • 1/2 c
    chopped walnuts (optional)

How to Make St. Patrick's Salad

Step-by-Step

  1. Disolve gelatin in boiling water. Add juice and green food coloring (if desired). Chill until mixture begins to thicken.
  2. Fold in remaining ingredients and chill overnight until fully set.
