My grandma served this every Christmas Eve dinner, and it's one of our favorites. Very refreshing!

Blue Ribbon Recipe

This is an old-fashioned Jell-O salad that needs to make a comeback. It's sweet with a touch of tartness from the raspberries. The gelatin is not very stiff, just firm enough to hold its shape. Creamy and slightly sweet, the topping brings all the flavors together. While Colleen's family serves this at Christmas, this would also be a cool and refreshing salad to have in the summertime. Throw in some blueberries, and you'd have a red, white, and blue dessert.

Ingredients

  • 2 packages frozen raspberries (12 oz each)
  • 2/3 cup granulated sugar
  • 3 cups hot water
  • 3 packages raspberry Jell-O (3 oz each)
  • 2 cups applesauce
  • 1 cup sour cream
  • 3 cups mini marshmallows
  • 1 cup whipped topping, thawed

  • Add sugar to raspberries and defrost.
    Step 1
    Defrost raspberries with sugar at room temperature, stirring until they are defrosted. This will take a few hours.
  • Mix hot water and Jell-O in a 9x13 baking dish.
    Step 2
    Mix hot water and pkgs of Jell-O (1 at a time) in a 9x13 pan.
  • Mix in raspberries.
    Step 3
    Mix in raspberries.
  • Mix in applesauce.
    Step 4
    Mix in applesauce.
  • Cover and place in the fridge overnight.

    Place in the fridge overnight.
  • Combine sour cream and marshmallows, cover with plastic wrap, and leave on the counter.
    Step 6
    Before bed, mix together sour cream and marshmallows. Cover with plastic wrap and leave on the counter overnight.
  • Mix marshmallows and sour cream until creamy. Mix in whipped topping.
    Step 7
    Next morning, mix marshmallows and sour cream with a mixer until creamy. Mix in 1 cup of whipped topping.
  • Spread over the gelatin.
    Step 8
    Spread over the top of the Jell-O salad.
  • Cut into squares and serve on a piece of lettuce.
    Step 9
    Cut into squares. Serve each on an iceberg lettuce leaf.
