We always wait eagerly when Mom says she will make her lime mold! It has always been my favorite and I ask for it when I go home.

Ingredients For doris's famous spring green mold

  • 1 pkg
    lime jello
  • 1 pkg
    3 ounce cream cheese or low fat cream cheese
  • 1 can
    small can crushed pineapple
  • 1
    sliced banana
  • 1 pt
    vanilla ice cream
  • 1/2 c
    chopped pecans

How To Make doris's famous spring green mold

    Prepare jello with 1 cup hot water in a large bowl. Set aside to cool. Remove ice cream from freezer and allow to slightly soften.

    Place softened cream cheese in a bowl and whip until smooth.

    Add the cream cheese to the jello mixing well and then add the ice cream to the jello and mix it together. Now add the chopped pecans and drained pineapple.

    Using a metal or glass mold pour half the mixture into pan, layer sliced banana and then add remaining cheese/ice cream mixture to cover. Place in fridge until completely firm. Unmold onto a plate lined with lettuce leaves and serve with fresh fruit or cookies as a garnish. (you can make this in a baking dish and scoop with a spoon if you do not want to make it in a mold.
