How to Make Doris's Famous Spring Green Mold
- 1Prepare jello with 1 cup hot water in a large bowl. Set aside to cool. Remove ice cream from freezer and allow to slightly soften.
- 2Place softened cream cheese in a bowl and whip until smooth.
- 3Add the cream cheese to the jello mixing well and then add the ice cream to the jello and mix it together. Now add the chopped pecans and drained pineapple.
- 4Using a metal or glass mold pour half the mixture into pan, layer sliced banana and then add remaining cheese/ice cream mixture to cover. Place in fridge until completely firm. Unmold onto a plate lined with lettuce leaves and serve with fresh fruit or cookies as a garnish. (you can make this in a baking dish and scoop with a spoon if you do not want to make it in a mold.
