- 1 pound fresh arugula or boston lettuce
- 3-4 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice, fresh( to taste)
- - salt and pepper to taste
- 1/4 pound parmesan cheese(single piece)

Step 1SLICE AND CHOP ZUCCHINI INTO PIECES AND SET ASIDE. WASH AND DRY LETTUCE.

Step 2IN A SALAD BOWL, WHISK OLIVE OIL,LEMON JUICE. AND SALT AND PEPPER TOGETHER. ADD ZUCCHINI AND TOSS UNTIL COATED.

Step 3CUT LONG PAPER- THIN SLICES OF CHEESE, PLACE THEM ON THE ZUCCHINI MIXTURE. DIVIDE THE LETTUCE ONTO 4 PLATES. SPOON MIXTURE ON TOP OF LETTUCE. GARNISH WITH EXTRA PARMESAN AND SERVE IMMEDIATELY.
