Ingredients

  • 2 pounds green zucchini (1 inch around)
  • 1 pound fresh arugula or boston lettuce
  • 3-4 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice, fresh( to taste)
  • - salt and pepper to taste
  • 1/4 pound parmesan cheese(single piece)

How To Make zucchini and parmesan salad

  • Step 1
    SLICE AND CHOP ZUCCHINI INTO PIECES AND SET ASIDE. WASH AND DRY LETTUCE.
  • Step 2
    IN A SALAD BOWL, WHISK OLIVE OIL,LEMON JUICE. AND SALT AND PEPPER TOGETHER. ADD ZUCCHINI AND TOSS UNTIL COATED.
  • Step 3
    CUT LONG PAPER- THIN SLICES OF CHEESE, PLACE THEM ON THE ZUCCHINI MIXTURE. DIVIDE THE LETTUCE ONTO 4 PLATES. SPOON MIXTURE ON TOP OF LETTUCE. GARNISH WITH EXTRA PARMESAN AND SERVE IMMEDIATELY.
