Ingredients

2 lb
green zucchini (1 inch around)
1 lb
fresh arugula or boston lettuce
3-4 Tbsp
extra-virgin olive oil
2 Tbsp
lemon juice, fresh( to taste)
salt and pepper to taste
1/4 lb
parmesan cheese(single piece)

How to Make ZUCCHINI AND PARMESAN SALAD

Step-by-Step

  • 1SLICE AND CHOP ZUCCHINI INTO PIECES AND SET ASIDE.
    WASH AND DRY LETTUCE.
  • 2IN A SALAD BOWL, WHISK OLIVE OIL,LEMON JUICE. AND SALT AND PEPPER TOGETHER. ADD ZUCCHINI AND TOSS UNTIL COATED.
  • 3CUT LONG PAPER- THIN SLICES OF CHEESE, PLACE THEM ON THE ZUCCHINI MIXTURE. DIVIDE THE LETTUCE ONTO 4 PLATES. SPOON MIXTURE ON TOP OF LETTUCE. GARNISH WITH EXTRA PARMESAN AND SERVE IMMEDIATELY.
