Ingredients

rice vinegar
1 Tbsp
granulated sugar
1/2 tsp
salt
1/8 tsp
ground black pepper
1 medium
cucumber, peeled
1/2
red onion, peeled and thinly sliced
2 Tbsp
chopped fresh cilantro leaves
1
red chili pepper, sliced in rings
2-4 c
mixed salad greens

How to Make Thai Salad (Ajar)

Step-by-Step

  • 1In a medium bowl, stir vinegar, sugar, salt, and pepper until sugar and salt are dissolved.
  • 2Quarter cucumber lengthwise. Remove seeds. Cut quarters crosswise into 1/8″ thick slices.
  • 3Add cucumber, onion, cilantro and chili pepper to vinegar dressing; toss until combined.
  • 4Cover and marinate in the refrigerator for 3 hours, stirring occasionally.
  • 5Serve on bed of greens.
