Ingredients
- 1 can 15 1/2 oz can black beans, rinsed and drained
- 1/4 cup jarred salsa
- 1/4 cup fresh cilantro, chopped
- 2 cups romaine lettuce, chopped
- 2 medium tomatoes, chopped
- 1 can 15 1/2 oz. can fire roasted whole kernel corn, drained
- 1 red bell pepper, chopped
- 1/4 - 1/2 cup green onions, chopped
- 1/2 cup cheddar cheese, shredded
- 1 avocado, chopped
- 2 slices bacon, cooked and crumbled
- 1/4 cup spicy ranch dressing (or your choice of dressing)
How To Make tex-mex layered salad

Step 1Mix together the beans, salsa and 2 tbsp. cilantro in a bowl.

Step 2In a clear glass bowl, layer the salad in this order: Bean mixture, lettuce, tomatoes, corn, bell pepper, green onion, and cheese.

Step 3Prior to serving, add the avocados to the top of the salad. Add bacon and remaining cilantro on top of avocado.

Step 4Drizzle the salad with the dressing and serve.
