From my mother-in-law. This one is a great summer salad!

  • ·
    fresh spinach or lettuce cut up
  • 1/3 c
    dried cranberries
  • 2
    fresh pears
  • 1/2 c
    blue cheese
  • 1/2 c
    almonds or pecan halves, toasted

  • 3 Tbsp
    frozen apple juice concentrate
  • 1 Tbsp
    dijon mustard
  • 3 Tbsp
    cider vinegar
  • 1/4 c
    olive oil

How to Make Spinach Pear Salad


  1. Toss together salad.
    NOTE: Nuts can be toasted on top of stove or in the oven. Be careful not to burn them. They only take a few minutes to roast/toast.
  2. Combine dressing ingredients a few hours ahead. Pour over salad just before serving.
