Spinach orzo salad, bacon honey mustard dressing

Spinach salad with orzo pasta. Topped with sliced hard boiled egg, bacon, toasted almonds and a warm bacon honey mustard dressing.

Ingredients

  •  
    baby spinach
  •   1/3 c
    toasted sliced almonds
  •   2
    hard boiled eggs
  •   1/3 c
    orzo pasta
  •   4 oz
    shredded swiss cheese
  •   6 slice
    bacon; 2 crumbled for the dressing
  • WARM BACON HONEY MUSTARD DRESSING
  •   1/3 c
    white wine vinegar
  •   1/3 c
    dijon mustard
  •   1/3 c
    honey
  •   1 small
    onion chopped
  •   1 Tbsp
    minced garlic
  •   pinch
    salt and pepper
  •   1 Tbsp
    olive oil, extra virgin

How To Make

  • 1
    Prepare your hard boiled eggs. I prefer the baking method.

    Cook orzo as directed on package.
  • 3
    While pasta is cooking, start your bacon.
  • 4
    Dressing- Add olive oil, onion and garlic to pan. Sautéed till translucent, a few minutes. Add in the rest of the ingredients, stir till warm and well blended. Serve warm.

    Drain orzo.
  • 6
    Mix spinach, orzo and dressing. Place bacon and sliced egg atop mixture.
