Spinach orzo salad, bacon honey mustard dressing

Spinach salad with orzo pasta. Topped with sliced hard boiled egg, bacon, toasted almonds and a warm bacon honey mustard dressing.

  • ·
    baby spinach
  • 1/3 c
    toasted sliced almonds
  • 2
    hard boiled eggs
  • 1/3 c
    orzo pasta
  • 4 oz
    shredded swiss cheese
  • 6 slice
    bacon; 2 crumbled for the dressing

  • 1/3 c
    white wine vinegar
  • 1/3 c
    dijon mustard
  • 1/3 c
  • 1 small
    onion chopped
  • 1 Tbsp
    minced garlic
  • pinch
    salt and pepper
  • 1 Tbsp
    olive oil, extra virgin

How to Make Spinach orzo salad, bacon honey mustard dressing


  1. Prepare your hard boiled eggs. I prefer the baking method.
  2. Cook orzo as directed on package.
  3. While pasta is cooking, start your bacon.
  4. Dressing-
    Add olive oil, onion and garlic to pan. Sautéed till translucent, a few minutes.

    Add in the rest of the ingredients, stir till warm and well blended.

    Serve warm.
  5. Drain orzo.
  6. Mix spinach, orzo and dressing. Place bacon and sliced egg atop mixture.
