How to Make Spinach-Arugula Salad
- Prepare a batch of lemon vinaigrette dressing. Refrigerate.
- Prepare a batch of sweet and spice pecans. Set aside.
- Peel the mandarin oranges and divide them into sections.
- Peel and pit the avocado. Cut into thin slices.
- Place spinach, arugula, avocado slices, mandarin orange sections and pecans in a large bowl.
- Pour the lemon vinaigrette dressing over the salad.
- Toss gently to mix ingredients and coat with the dressing.
- Serve immediately.
