Ingredients

1romaine lettuce head

A dash(es)italian seasoning

1/2english cucumber, thinly sliced

1/2 cgrape-size tomatoes, rinsed

4sundried tomatoes (in oil), drained and halved

1/4 ckalamata olives, drained

4whole pepperoncini peppers

1 Tbspsliced pepperoncini peppers, drained

2 tspcapers, rinsed and drained

4 Tbspfeta cheese, crumbled
-
1/2small lemon
-
4 Tbspolive oil

·salt and pepper to taste
How to Make Rick's Favorite Greek Salad
- Rinse lettuce and pat dry with paper towels. Thinly slice and place in bowl. Lightly sprinkle Italian seasoning over lettuce.
- Add cucumber, grape tomatoes, sundried tomatoes, olives, peppers, capers and feta cheese to lettuce. Squeeze lemon juiceover all and drizzle with olive oil.
- Season with salt and pepper to taste, then gently toss to combine. Mound onto large platter and serve immediately.
- Note: Boiled and chilled shrimp may be added for a special treat!
Lettuce can be prepped earlier in the day and stored in the refrigerator. Cucumber, tomatoes, olives, peppers, capers and lemon can also be stored together in a covered bowl until serving but keep the feta cheese separate as it has a strong flavor.
Ingredient amounts can be adjusted to suit your taste.
