This is such a quick and easy salad for a warm summer day, served as cold as you can get it without freezing. Okay, It is good any time of year, but so good for summer. Try it, I hope you will like it.

  • 1/3 cup
    olive oil
  • 1/4 cup
    orange juice
  • 3 tbs
  • 1 clove
    garlic, minced
  • 8 cups
    torn spinach or mixed greens
  • 3
    medium navel oranges, peeled and chopped
  • 1 cup
    sliced thin red onion
  • 1/2 cup
    crumbled feta or blue cheese, your choice
  • 1/4 cup
    slivered almonds, toasted (optional)

How to Make Onion Cheese Orange Salad


  1. In a small bowl whisk first 7 ingredients together. On a serving platter or individual plates, arrange greens, oranges and onions. Drizzle with dressing. Sprinkle with cheese of choice and almonds.
