I've enjoyed this simple, yet fast salad since I can remember. My aunt would always make one similar and often. She never added the bacon, that's my addition. I could make a meal out of this salad. I hope you try it sometime.

Ingredients

  • 1/2
    head, iceburg lettuce, torn into bite sized pieces
  • 4 oz
    fresh spinach leaves, tear if large
  • 2
    hard boiled eggs
  • 1 large clove
    cut garlic
  • 1/4 tsp
    heaping, dry mustard
  • 3/4 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 1/4 c
    rice vinegar or regular
  • 1/2 c
    vegetable oil
  • 1 medium
    sweet onion, sliced thinly
  • 1/4 - 1/2 c
    crumbled, i used real bacon bits tonight

How to Make ~ My Western Salad ~ Yum!

Step-by-Step

  1. In a large pretty glass bowl, that you will be serving the salad in, rub sides of bowl well, with cut garlic.

    Cut eggs in half and remove yolks, chop the whites.

    In the bowl, whisk together, yolks, mustard, salt, pepper, vinegar and oil. Mash any yolk that's not dissolved.
  2. To the dressing, add the onion, spinach, lettuce, bacon and chopped whites. Toss well to coat with dressing.
  3. Serve immediately. I can make a meal out of this salad.
