~ my western salad ~ yum!
I've enjoyed this simple, yet fast salad since I can remember. My aunt would always make one similar and often. She never added the bacon, that's my addition. I could make a meal out of this salad. I hope you try it sometime.

Ingredients
- 1/2 - head, iceburg lettuce, torn into bite sized pieces
- 4 ounces fresh spinach leaves, tear if large
- 2 - hard boiled eggs
- 1 large clove cut garlic
- 1/4 teaspoon heaping, dry mustard
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup rice vinegar or regular
- 1/2 cup vegetable oil
- 1 medium sweet onion, sliced thinly
- 1/4 - 1/2 cup crumbled, i used real bacon bits tonight

Step 1In a large pretty glass bowl, that you will be serving the salad in, rub sides of bowl well, with cut garlic. Cut eggs in half and remove yolks, chop the whites. In the bowl, whisk together, yolks, mustard, salt, pepper, vinegar and oil. Mash any yolk that's not dissolved.

Step 2To the dressing, add the onion, spinach, lettuce, bacon and chopped whites. Toss well to coat with dressing.

Step 3Serve immediately. I can make a meal out of this salad.
