Ingredients

  • 1 can can black beans drained
  • 6 oz - grated cheese low fat
  • 1 - chopped lettuce
  • 1 package cherry tomatoes
  • 2 - green onions chopped
  • 1 bunch cilantro rinsed chopped
  • 1 can black olives
  • 3 - small limes juiced
  • 1 cup sour cream, fat-free or greek yorgurt
  • 1 clove fresh minced
  • 1/2 cup milk, low-fat
  • 1 pinch salt and pepper
  • 1 package cornbread mix
  • 1 package shelled pumpkin seeds toasted

How To Make mexican summer salad

  • Step 1
    Mix juice from limes,cilantro,garlic,salt n pepper,sour cream in food processor add olive oil and milk slowly .. .bake corn bread follow instructions.. let cool..then cut into crouton size
  • Step 2
    layer the cheese olives salad dressing cherry tomatoes cheese green onions salad dressing add lettuce put cornbread on top,,,,give it a toss in pumpkin seeds when your ready to serve
