mexican salad with avocado dressing

This is a very tasty salad. I just love the avocado dressing its made with. The original recipe doesn't call for meat but I have added taco meat or shredded chicken meat and it was delicious ! You can have it with / with out meat and it still delicious !

Ingredients

  • FOR THE AVOCADO DRESSING.
  • 1 large avocado
  • 1 1/2 tablespoons lemon juice, fresh
  • 1/4 cup olive oil, extra virgin
  • 3/4 teaspoon sea salt
  • 2 cloves garlic
  • 1/2 cup mayonnaise
  • 1 teaspoon hot sauce
  • FOR THE SALAD
  • 2 medium heads romaine lettuce ; chopped
  • 3 large tomatoes ; chopped
  • 2 cups corn chips ; roughly crushed
  • 3/4-1 cup cheddar cheese, shredded
  • 15 ounces canned pinto beans ; drained & rinsed
  • 5 - green onions ; chopped
  • 1 can black olives (2.25 oz)
  • FOR TACO MEAT ; OPTIONAL
  • 1/2-1 pound hamburger
  • 1 package taco seasoning mix
  • 1/2 cup water

How To Make mexican salad with avocado dressing

  • Step 1
    For the sauce ; combine ALL the ingredients in a food processor or blender , process until smooth and creamy. Taste and adjust seasonings. Cover and refrigerate.
  • Step 2
    In a large skillet brown hamburger , cook until hamburger is no longer pink , add taco seasoning and mix well, add about 1/2 cup water and let simmer.
  • Step 3
    For the salad Combine all the ingredients in a large serving bowl.
  • Step 4
    When ready to eat Toss the salad well with the hamburger (optional) and the chilled sauce ; serve immediately. Enjoy !
