Ingredients
- DRESSING
- 2 tablespoons olive oil, extra virgin
- 1 teaspoon fresh, chopped oregano
- 1 - lemon
- 1 tablespoon honey
- - salt & pepper to taste
- SALAD
- 1 cup lemonade
- 4 large peaches
- 2 tablespoons olive oil, extra virgin
- 2 cups spring mix greens
- 1 large avocado, diced
- 1/4 cup green olives, pitted and halved
- 1/4 cup black olives, pitted and halved
- 1 medium cucumber, thinly sliced
- 1 cup feta cheese crumbles
How To Make mediterranean grilled peach and feta salad

Step 1Juice and zest the lemon.

Step 2Combine the lemon juice and zest with the remaining dressing ingredients in a cruet or jar. Mix well and set aside.

Step 3Slice each peach into 8 wedges and remove the pit.

Step 4In a bowl, combine peach wedges and lemonade. Gently toss then drain.Place peaches in a baking pan.

Step 5Add olive oil and toss to coat. Set aside

Step 6In a salad bowl, layer the greens, avocado, olives, cucumber and feta.

Step 7Drizzle the dressing over the salad. Cover with plastic wrap and chill while grilling the peaches.

Step 8Heat your grill to about 375 degrees.

Step 9Spray a grilling mesh with nonstick cooking spray.

Step 10Place peach slices on the mesh and grill for 3 minutes on each side.

Step 11Top the salad with the grilled peaches and toss gently.

Step 12Serve immediately or refrigerate, covered until ready to serve.
