This refreshing salad is a great side dish for cookouts and picnics.

Ingredients

  • DRESSING
  • 2 tablespoons olive oil, extra virgin
  • 1 teaspoon fresh, chopped oregano
  • 1 - lemon
  • 1 tablespoon honey
  • - salt & pepper to taste
  • SALAD
  • 1 cup lemonade
  • 4 large peaches
  • 2 tablespoons olive oil, extra virgin
  • 2 cups spring mix greens
  • 1 large avocado, diced
  • 1/4 cup green olives, pitted and halved
  • 1/4 cup black olives, pitted and halved
  • 1 medium cucumber, thinly sliced
  • 1 cup feta cheese crumbles

How To Make mediterranean grilled peach and feta salad

  • Step 1
    Juice and zest the lemon.
  • Step 2
    Combine the lemon juice and zest with the remaining dressing ingredients in a cruet or jar. Mix well and set aside.
  • Step 3
    Slice each peach into 8 wedges and remove the pit.
  • Step 4
    In a bowl, combine peach wedges and lemonade. Gently toss then drain.Place peaches in a baking pan.
  • Step 5
    Add olive oil and toss to coat. Set aside
  • Step 6
    In a salad bowl, layer the greens, avocado, olives, cucumber and feta.
  • Step 7
    Drizzle the dressing over the salad. Cover with plastic wrap and chill while grilling the peaches.
  • Step 8
    Heat your grill to about 375 degrees.
  • Step 9
    Spray a grilling mesh with nonstick cooking spray.
  • Step 10
    Place peach slices on the mesh and grill for 3 minutes on each side.
  • Step 11
    Top the salad with the grilled peaches and toss gently.
  • Step 12
    Serve immediately or refrigerate, covered until ready to serve.
