  • 2 Tbsp
    olive oil, extra virgin
  • 1 tsp
    fresh, chopped oregano
  • 1

    salt & pepper to taste

  • 1 c
  • 4 large
  • 2 Tbsp
    olive oil, extra virgin
  • 2 c
    spring mix greens
  • 1 large
    avocado, diced
  • 1/4 c
    green olives, pitted and halved
  • 1/4 c
    black olives, pitted and halved
  • 1 medium
    cucumber, thinly sliced
  • 1 c
    feta cheese crumbles

How to Make Mediterranean Grilled Peach and Feta Salad


  1. Juice and zest the lemon.
  2. Combine the lemon juice and zest with the remaining dressing ingredients in a cruet or jar. Mix well and set aside.
  3. Slice each peach into 8 wedges and remove the pit.
  4. In a bowl, combine peach wedges and lemonade. Gently toss then drain.Place peaches in a baking pan.
  5. Add olive oil and toss to coat. Set aside
  6. In a salad bowl, layer the greens, avocado, olives, cucumber and feta.
  7. Drizzle the dressing over the salad. Cover with plastic wrap and chill while grilling the peaches.
  8. Heat your grill to about 375 degrees.
  9. Spray a grilling mesh with nonstick cooking spray.
  10. Place peach slices on the mesh and grill for 3 minutes on each side.
  11. Top the salad with the grilled peaches and toss gently.
  12. Serve immediately or refrigerate, covered until ready to serve.
