I just love salads and this one is a complete meal-in-one. I usually add any fresh veggie that I have in the refrigerator.

How to Make Meal-in-a-Salad

  1. In a large salad bowl, tear the lettuce into bite-size pieces.
  2. Add the rest of the prepared items except the cucumbers and eggs.
  3. At this point you can cover this bowl and let chill in the refrigerator.
  4. Just before serving, add the cucumbers and eggs. Gently toss.
  5. In a small bowl, mix the dressing ingredients well. Taste to see if any adjustments need to be made. If you prefer, you can use your favorite salad dressing instead.
  6. Pour dressing over the salad and toss to combine. Place in a chilled serving dish and serve.
