I just love salads and this one is a complete meal-in-one. I usually add any fresh veggie that I have in the refrigerator.

Ingredients

  • 1 - head lettuce or large bag of your favorite salad greens
  • 1 small bag baby spinach leaves
  • 1 1/2 cups ham, cubed or strips
  • 1 small red onion, halved the sliced
  • 1 -2 - ribs celery, chopped
  • 1 - red bell pepper, cut into strips
  • 1 cup shredded carrot
  • 6-8 - radishes, thinly sliced
  • 1 pint cherry tomatoes
  • 6 - hard boiled eggs, cut into large pieces
  • 2 cups cubed mozzarella or cheddar cheese
  • 1 - cucumber, washed and thinly sliced
  • EASY SALAD DRESSING
  • 1 cup miracle whip
  • 2 teaspoons honey mustard
  • 1 teaspoon celery seeds
  • 1/2 teaspoon ground black pepper

How To Make meal-in-a-salad

  • Step 1
    In a large salad bowl, tear the lettuce into bite-size pieces.
  • Step 2
    Add the rest of the prepared items except the cucumbers and eggs.
  • Step 3
    At this point you can cover this bowl and let chill in the refrigerator.
  • Step 4
    Just before serving, add the cucumbers and eggs. Gently toss.
  • Step 5
    In a small bowl, mix the dressing ingredients well. Taste to see if any adjustments need to be made. If you prefer, you can use your favorite salad dressing instead.
  • Step 6
    Pour dressing over the salad and toss to combine. Place in a chilled serving dish and serve.
