Since going gluten-free, I had to come up with quick and easy lunches to make for my daughter's school lunches. So, I came up with this tasty Taco Salad, which can be eaten with a fork, or scooped up with tortilla chips.

Ingredients

  • 1-2 cup lettuce
  • 1/2 - avocado
  • 1/4 cup salsa
  • 1 tablespoon sour cream
  • 1 - tomato, cut into squares
  • 1 - green onion, handful
  • 1/4 cup shredded cheese, any kind

How To Make layered meatless taco salad for lunchbox

  • Step 1
    In a plastic lunch container, layer all above ingredients until they are all in the container.
  • Step 2
    Serve with tortilla chips.
