Since going gluten-free, I had to come up with quick and easy lunches to make for my daughter's school lunches. So, I came up with this tasty Taco Salad, which can be eaten with a fork, or scooped up with tortilla chips.

    sour cream
  • 1
    tomato, cut into squares
  • 1
    green onion, handful
  • 1/4 c
    shredded cheese, any kind

How to Make Layered Meatless Taco Salad for Lunchbox


  1. In a plastic lunch container, layer all above ingredients until they are all in the container.
  2. Serve with tortilla chips.
