Since going gluten-free, I had to come up with quick and easy lunches to make for my daughter's school lunches. So, I came up with this tasty Taco Salad, which can be eaten with a fork, or scooped up with tortilla chips.

In a plastic lunch container, layer all above ingredients until they are all in the container.
Serve with tortilla chips.
