This is so healthy, good for you and tasty. Use all organic, 'whole' ingredients and you have a very HIGH ANDI score for your salad. Everyone who tries this enjoys and wants the recipe :-)

Ingredients

  • 1 pound kale - choose a healthy head of kale (organic)
  • 1 can tangerines (save the juice)
  • 1/2 cup walnuts
  • 1/2 cup almonds, slivered
  • 1/2 large cucumber
  • 2 large tomatoes (chopped into small quarters)
  • 1/2 large apple, chopped
  • 1/4 - toasted sesame seeds
  • 1 cup grated parmesan cheese
  • 12 small black kalamata olives
  • 1/2 cup shredded carrots
  • DRESSING
  • 1/2 cup olive oil
  • 1 large lemon (juiced)
  • 1/2 cup tangerine juice
  • - sale to taste
  • - pepper to taste

How To Make kale tangerine salad

  • Step 1
    Wash and dry Kale leaves and tear into bite size pieces. Chop and dice the apples, cucumbers, tomatoes into bit sized chunks. Add all the nuts, sesame seeds, cheese and remaining ingredients. Toss to mix well.
  • Step 2
    Mix olive oil, lemon, tangerine juice and salt and pepper to taste. Toss well and coat well. Put in the fridge to sit for ONE hour. Add additional lemon and seasoning if you wish. DELICIOUS
