I love salad. I am convinced that women crave salads and I am one of them. Sometimes instead of sitting down and having a heavy meal with the family. I like something refreshing to my palette and this hits the spot.

  • 4-6 c
    lettuce, wahed and torn
  • 1 c
    jicama, peeled and julienned
  • 1/2 c
    roasted pumpkin seeds (pepitas)
  • 1/2 c
    garbanzo beans (chickpeas)
  • 1/4 c
    red wine vinegar
  • 1
    shallot peeled and minced
  • 1 tsp
    dijon mustard
  • 1 tsp
    fresh thyme chopped
  • ·
    salt to taste
  • ·
    pepper to taste
  • pinch
  • 1/2 c
    extra virgin olive oil

How to Make Jicama Pepita Garbanzo Salad


  1. Put the lettuce, jicama, pepitas and garbanzo beans in a large bowl.
  2. In a small bowl combine the vinegar, shallot, thyme, salt, pepper, sugar, mustard.
    Whisk the olive oil into the mustard mixture.
  3. Pour the dressing over the salad ingredients and toss to coat.
