lettuce, wahed and torn

jicama, peeled and julienned
1/2 c
roasted pumpkin seeds (pepitas)
1/2 c
garbanzo beans (chickpeas)
1/4 c
red wine vinegar

shallot peeled and minced
1 tsp
dijon mustard
1 tsp
fresh thyme chopped
salt to taste
pepper to taste
pinch
sugar
1/2 c
extra virgin olive oil

How to Make Jicama Pepita Garbanzo Salad

Step-by-Step

  • 1Put the lettuce, jicama, pepitas and garbanzo beans in a large bowl.
  • 2In a small bowl combine the vinegar, shallot, thyme, salt, pepper, sugar, mustard.
    Whisk the olive oil into the mustard mixture.
  • 3Pour the dressing over the salad ingredients and toss to coat.
