I love salad. I am convinced that women crave salads and I am one of them. Sometimes instead of sitting down and having a heavy meal with the family. I like something refreshing to my palette and this hits the spot.

Ingredients

  • 4-6 cups lettuce, wahed and torn
  • 1 cup jicama, peeled and julienned
  • 1/2 cup roasted pumpkin seeds (pepitas)
  • 1/2 cup garbanzo beans (chickpeas)
  • 1/4 cup red wine vinegar
  • 1 - shallot peeled and minced
  • 1 teaspoon dijon mustard
  • 1 teaspoon fresh thyme chopped
  • - salt to taste
  • - pepper to taste
  • pinch sugar
  • 1/2 cup extra virgin olive oil

How To Make jicama pepita garbanzo salad

  • Step 1
    Put the lettuce, jicama, pepitas and garbanzo beans in a large bowl.
  • Step 2
    In a small bowl combine the vinegar, shallot, thyme, salt, pepper, sugar, mustard. Whisk the olive oil into the mustard mixture.
  • Step 3
    Pour the dressing over the salad ingredients and toss to coat.
