Ingredients
- 4-6 cups lettuce, wahed and torn
- 1 cup jicama, peeled and julienned
- 1/2 cup roasted pumpkin seeds (pepitas)
- 1/2 cup garbanzo beans (chickpeas)
- 1/4 cup red wine vinegar
- 1 - shallot peeled and minced
- 1 teaspoon dijon mustard
- 1 teaspoon fresh thyme chopped
- - salt to taste
- - pepper to taste
- pinch sugar
- 1/2 cup extra virgin olive oil
How To Make jicama pepita garbanzo salad

Step 1Put the lettuce, jicama, pepitas and garbanzo beans in a large bowl.

Step 2In a small bowl combine the vinegar, shallot, thyme, salt, pepper, sugar, mustard. Whisk the olive oil into the mustard mixture.

Step 3Pour the dressing over the salad ingredients and toss to coat.
