Ingredients

  • 2 tablespoons dressing of your choice
  • 1/4 cup frozen peas
  • 1/8 cup radishes, sliced
  • 1/4 cup cucumber
  • 1/4 cup carrot, sliced
  • 1/4 cup frozen edamame
  • 1/8 cup red onion
  • 1/4 cup celery
  • 1/8 cup bell pepper
  • 1/2 cup quinoa, cooked
  • 2 cups mixed greens
  • RECIPE IS FOR 1 PINT JAR/SERVING

How To Make in a jar salad

  • Step 1
    Add dressing 1st, then hardy veggies (beans if desired), then softer veggies (cheese if desired) ending w/greens on top. Keeps up to 1 week. Add whatever your little heart desires inc. fruit. This recipe is less than 350 cals. per jar and I used all organic. 12 salads = less than $20!
