Heart Healthy Chopped Salad

The salad makings are chopped to make it easier to eat and digest and the salad dressing I made up using the base of cashew butter from another recipe I saw in a book.
People really like this salad.
Ingredients

1 1/2 ccabbage, green or red, shredded

4 cromaine lettuce or other type, chopped

1 largetomato, diced

1/4 cred onion, chopped
-
1/3 cyellow, red or green bell pepper, chopped

1/3 ccucumber, chopped

1/2 ccauliflower or broccoli, chopped

1/2 cmushrooms, chopped
-
2 Tbspraisins, chopped dates, apricots or dried cranberries
-
2 Tbspmixed nuts or walnuts, chopped
-
3 Tbspparsley, chopped
-
1 1/2 Tbspraw cashew butter
-
2 1/2 Tbspbalsamic or rice vinegar or lemon juice

1 clovegarlic, chopped fine
-
1/2 tspmustard
-
1/8 calmond milk
How to Make Heart Healthy Chopped Salad
- Shred, chop or dice all fresh ingredients and place in a big salad bowl with nuts and dried fruit.
- Mix the cashew butter, vinegar or lemon juice, garlic, mustard and almond milk in a small bowl. Add more almond milk if necessary to stir to creamy consistency and pour over salad. Toss.
- This is a big salad for two or more depending on how much you want to eat and what else you're having.
It's good leftover too.
