I'm on a new diet to get slim and healthy after having a procedure on my heart called cardiac ablation. The diet is basically almost wholly vegetarian and foods that are packed with nutrition.

The salad makings are chopped to make it easier to eat and digest and the salad dressing I made up using the base of cashew butter from another recipe I saw in a book.

People really like this salad.
