Ingredients
- SALAD
- 6 fresh pineapple slices, cored
- 4 cups chopped romaine lettuce
- 1 large cucumber, peeled and diced
- 2 cups cubed ham chunks
- 1/2 red onion, sliced
- 2 cups cherry tomatoes, halved
- 1 large avocado, sliced
- 1/4 cup coconut flakes
- 1/4 cup candied ginger
- PINEAPPLE LEMON VINAIGRETTE
- 1/2 cup pineapple juice
- 1/4 cup lemon juice
- 1/2 cup olive oil
- salt and pepper, to taste
How To Make grilled pineapple salad with pineapple vinaigrette

Step 1To prepare the salad, heat the grill and grill the pineapple slices until they are soft and grill marked. Set aside.

Step 2To make the vinaigrette, smash the pineapple slices through a fine mesh strainer to get the juice from the remaining pineapple. Add the lemon juice and olive oil and mix well season to taste with salt and pepper.

Step 3Arrange on the plate the lettuce, cucumbers, ham, pineapple slices, red onion, tomatoes, avocado slices, coconut flakes and candied ginger. Top with the vinaigrette.
